Ingredients:

1 ¾ cups Amasar All-Purpose Breadfruit Flour Mix

1 tsp baking powder

1 tsp pumpkin pie spice (or a mix of cinnamon, ginger, and nutmeg)

½ tsp salt

1 ½ cups milk (regular or plant-based)

¾ cup pumpkin purée

2 eggs

2 tbsp coconut oil or melted butter

1 tsp vanilla extract

1–2 tbsp honey or maple syrup (optional)
Instructions:
1️⃣ In a bowl, whisk together the dry ingredients.
2️⃣ In another bowl, mix the wet ingredients: milk, pumpkin purée, eggs, oil, and vanilla.
3️⃣ Combine both mixtures and stir gently until just incorporated — do not overmix.

4️⃣ Cook the pancakes on a nonstick skillet over medium-low heat for 2–3 minutes per side.
