The perfect recipe for this season 🍂 — high in protein, gluten-free, and with a tropical touch of breadfruit 💚

Ingredients:

  • 1 ¾ cups Amasar All-Purpose Breadfruit Flour Mix

  • 1 tsp baking powder

  • 1 tsp pumpkin pie spice (or a mix of cinnamon, ginger, and nutmeg)

  • ½ tsp salt

  • 1 ½ cups milk (regular or plant-based)

  • ¾ cup pumpkin purée

  • 2 eggs

  • 2 tbsp coconut oil or melted butter

  • 1 tsp vanilla extract

  • 1–2 tbsp honey or maple syrup (optional)

Instructions:

1️⃣ In a bowl, whisk together the dry ingredients.
2️⃣ In another bowl, mix the wet ingredients: milk, pumpkin purée, eggs, oil, and vanilla.
3️⃣ Combine both mixtures and stir gently until just incorporated — do not overmix.
👉 Note: If you find the batter too thick, add a bit more flour until it reaches your desired consistency.
4️⃣ Cook the pancakes on a nonstick skillet over medium-low heat for 2–3 minutes per side.
5️⃣ Serve with your favorite toppings: syrup, fruit, nuts, or Greek yogurt.
