Banana Breadfruit Muffins | Gluten-Free

INGREDIENTS

  • 4 bananas mashed
  • 2 cups Amasar All Purpose Gluten Free Flour
  • 3 eggs or alternatives
  • 2 tablespoon honey
  • 1 tablespoon sugar or alternatives
  • 1 tablespoon vanilla
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • Pinch of salt
  • Walnuts or Oats for decoration (optional)


HOW TO COOK:

Preheat the oven to 350°F (175°C) and lightly grease a muffin tin or line it with paper liners.

In a large bowl, mash the bananas until smooth. Add the eggs, honey, sugar, and vanilla, and mix well.

Add the Amasar All Purpose Gluten Free Flour, baking powder, cinnamon, and a pinch of salt. Stir until all ingredients are fully combined and a smooth batter forms. Do not overmix.

Spoon the batter evenly into the muffin cups. If desired, top with walnuts or oats for decoration.

Bake for about 45 minutes, or until golden and a toothpick inserted in the center comes out clean.

Let cool for a few minutes before serving.
